We are a small family farm tucked away in the mountains of Ashe County, North Carolina. Each year we make about 100 gallons of syrup in our wood-fired sugar house during a slim window of weeks in late winter.
North Carolina’s only sugar maker.
How We Make Syrup
We tap both sugar and red maples in our native, mixed hardwood forest. Each year we set about 800 taps in these trees that are connected by a network of tubing that runs downhill, emptying into large collection tanks. When the sap comes out of the tree looks and flows like water, and tastes only faintly sweet.
