We begin with fresh maple sap pictured above, and we simply boil it down into gorgeous, golden syrup.
Doug is back in the sticky this year after missing the 2022 season with health issues, and Michael has been teaching him the intricacies of running the reverse osmosis machine.
Wheeler is also back in full swing after reduced duties since the birth of Maeve who is now a toddler and supervising the action close to the floor.
Wheeler and Michael, with the help of friends Nina and Jason, tapped the trees on Friday, January 20th, a week earlier than usual and we have made syrup in January for the first time in five years! January syrup is always a special treat with it’s lighter golden hue and fruity flavor. 622 taps were set this year, 52 more than last year, and there have been four short sap runs so far. The extended weather forecast into early February is looking like good sugaring weather with a run in full swing now and expected to continue through Tuesday, the 31st.
We are excited about our early start to the season and hopefully are in for a long one.

We will begin selling syrup at the conclusion of our sugar making season in late winter/early spring. When our syrup is ready to sell, we will first host an in person event at Molley Chomper cidery in Lansing, NC where we will debut our season’s syrup, and then make the remaining inventory of syrup available for purchase online afterward.
